The Grubbs Family & Chicken Spinach CrockPot Lasagna

Meal-Time Monday with the Grubbs

It's Monday, and you know what that means...Meal-Time Monday! This week we head to the Grubbs household, home to Brian & Leya and their three children, Payton (4th), Walker (TK), & Tyler(2nd) (pictured left to right).

As expressed last week, study after study confirms the impact of family meal time with adolescents specifically. Consider this conclusion from a 2013 study, "Nutrition professionals should encourage families of adolescents to share meals often and establish the tradition of eating together." It's never too early or too late to sit down as a family and fellowship!

As we visited with Leya, she shared, "Sit-down family dinners, which are a priority in our home, are a time we connect, decompress, share stories about our day and just laugh. I LOVE hearing my kids take turns saying our dinner prayer. They pray for their teachers and classmates and list all the blessings they're grateful for. Brian and I learn a lot about what's on their little hearts! Family meal time is a dying occurrence in this day and age. It's important to me to stay 'old school' in this regard and for my children to hopefully do the same with their children!"

Chicken Spinach Crockpot Lasagna

Ingredients

* 1 package of raw chicken breast (3-4)
16 oz. of chicken broth (divided 8oz/8oz)
1 10-oz package of frozen spinach THAWED, WELL-DRAINED
2 10-oz tubs of refrigerated Alfredo sauce
1 can cream of mushroom soup
4 cups of shredded Italian cheese blend (divided 2c/2c)
"oven ready" lasagna noodles (I use Skinner brand)

Seasonings of your choice...salt, pepper, dried basil, oregano, garlic, etc.
Serve with parmesan cheese if desired.


Instructions

The night before, cook chicken breasts in 8 oz. of chicken broth in crockpot overnight on LOW. Also, thaw spinach overnight.

In the morning, remove cooked chicken breast and dump broth.
Shred chicken.
Spray crockpot with cooking spray.
In mixing bowl, combine well-drained spinach, 8 oz. of chicken broth, shredded chicken and next three ingredients with desired seasonings.
Layer alternating spinach/chicken mixture and noodles in crockpot (making sure noodles aren't on top).
Cover the top layer (should be spinach/chicken mixture) with remaining Italian cheese blend.
Cook on LOW for 3 1/2 to 4 hours (noodles should be tender, mixture bubbly with golden edges)
